Banana Bread Blondies

Move aside banana bread - this is THE bake to make next time you've got a couple of overripe bananas.

I wasn’t planning on making these…Like most good banana recipes, they started with two bananas that had reached the point where nobody wanted to eat them but throwing them away felt morally wrong.

I was aiming for banana bread but ended up somewhere between a blondie, a banana bread and the sort of thing you’d buy from a coffee shop and immediately regret not ordering two of.

They’re ridiculously good with a morning flat white or 11ensies.

I’d serve them warm with a spoonful of whipped vanilla yogurt and call them a breakfast. Whether that’s nutritionally defensible is another question entirely.

With the option to make these Vegan and some cunning ingredients to make them feel like a bake you can have for breakfast... these are one you simply MUST make with your overripe bananas.

So lets get into it…

  • 2 very ripe bananas (about 220g peeled)
